USDA certified organic sugar cane is harvested from the field surrounding the distillery then crushed to release the fresh juice to be fermented using yeast that has been cultivated to make Novo Fogo Cachaça. After distillation, resting one year in steel tanks softens the fresh distillate and brings out the fruit and slightly salty flavor of this product.
Bottled at 40% alcohol by volume.
