Started in 1993 by Eduardo Felippo as a communal project for small sugar cane farmers in the Arroyos y Esterso region of Paraguay about 60 miles north of the capital Asuncion. Today more about 800 families are producing sugar cane which is crushed and then fermented for 36 hours before being distilled in traditional stills. Papagayo is certified organic and is a model for improved and sustainable sugar cane farming.
