Incidentally, I believe the original champagne cocktail was often served over crushed ice.
I was served that drink in San Francisco about four years ago made with Neisson Blanc, Petite Cane Sugar Cane Syrup and Brut Champagne. Everyone loved it but the bar has since closed. Maybe they were ahead of their time.

Weird. I Google for cocktail ideas with agricole rhum and champagne and find my own comment from a couple of years ago.

Didn't find any recipes Googling just now (partly because of China's Internet censorship), so tried agricole (Trois Rivieres 55%) with Green Chartreuse (more), Maraschino (less), lemon juice (less), orange juice (more), and champagne (OK, Cava). All juices freshly squeezed.

The balance isn't perfect, but it's more than drinkable and has potential. Possibly needs re-balancing of the proportions. Or possibly needs some Peychaud's bitters, or possibly even absinthe.

I think Benedictine could also be an interesting mix with agricole and champagne.

You must have been ahead of the times!

Benedictine is basically very sweet herbal brandy - I'd go at it 'Sazerac style' ~ mix 50% cognac & 50% rum. Maybe cut the sugar?

I made the Jaguar cocktail from Intoxica / Tiki+ app - its a lot of effort but a bit of fun next time you have champagne or cava in the house.

If I was to sub a rum for cognac generally I'd use what I consider a good 'gold' (Mount Gay / Bacardi 8 / Angostura 1919 / Plantation Barbados 5). Plantation rums have a cognac finish you can detect from it so that might fit well.

If I had the ingredients I probably just have a Champagne Classic (champagne, sugar, bitters, brandy), I have one about twice a year & they are great! :-)
