I have a small distillery 50 km south of Canberra, Australia.My operation is at 1000metres, I am making a rich dark rum using molasses and water only, as well as a lighter raw sugar /molasses water based rum. In Australia we have to age in oak for a minimum of 2 years, and I have only been operating for 12 months.
I also am manufacturing single malt whisky, with the same restrictions
