March 2012 El Dorado 3 Year Old Cask Aged Rum
The March 2012 Rum of the Month is El Dorado 3 Year Old Cask Aged Rum. Aged three years at the distillery warehouse in Guyana and then carbon-filtered to remove the color gained during the time spent in the charred oak barrels.

What a good choice. Comfortably the best white rum I've ever tasted.

I may have to pick up a bottle of this. Is it best as a sipper or mixer?

I don't sip any white rum, though more than a few rum drinkers do drink white rum straight. I prefer to mix these rums with citrus or other juice. Rum martinis anyone?

I normally don't sip white rum either, but since this is aged 3 years and the color from the wood is removed by filtering I'm thinking this is a very different white rum. Would it not taste similar to a 3 year aged rum that is not filtered and has some gold color?

Same for me. Citrus and a touch of sweetness enhance the rum's specificity.

Still not understanding the purpose of aging a rum then filtering out the color it aqquired during aging. Does this rum taste similar to El Doroado Golden Rum, which is not filtered? I hope someone can enlighten me on this as I'm very curious.

Sipping on this right now.
It's very light, clean and flavourful. By far the top white rum I have tried so far. I am glad to own this one.
