Just having some lunch and sampling a new 15 Year Old Rum we are thinking about as a limited release, tastes good!!

Hey Paul! Helena turned me on to this thread and recipe. I've simply GOTTA try it! Im gonna tweak it using the jerk rub that we make here at the bar. If it simply kills, would you mind so much of me including it on our menu? (all the credit, of course, will go to the bartender who made it for your cocktail competition.

Joe Stokoe Appleton Bartender of the year, got it!

As for the drink, I took our jerk sauce and added extra lime juice to it (scotch bonnets, thyme, rosemary, red wine vinegar, lime, allspice, and scallions). Strained the concoction to get a wonderfully unattractive brown color.

Our first version:
2 oz Appleton V/X
1 oz Jerk jus
1 oz Simple Syrup (1:1)

However this came out with too much potency from the jerk and the Appleton was hidden.

Second version:
2 oz Appleton V/X
1/2 oz Jerk jus
1 oz Simple Syrup
1/2 oz Water

This was very flavorful, balanced, and spicy. Delicious, great idea!!

Adam,
I think more rum is better (as always!) and more lime will subdue the jerk.
I did 5 parts rum, 2 parts lime juice, 1 part jerk mix. I also tried different Appletons and so far think the Extra shows up best.

Thanks Rum Runner! Ive become a Facebook addict and cant find time for more than one social network.

Problem with using the Extra is I would price the drink $9 for V/X and $12 for Extra and Id like more people to try it. And for those who love it, not break their bank. BUT if the Extra makes a huge improvement, well then, Im all for the bettering of cocktails!
