Rum in food recipes

Rum isn't just to be poured in a glass. There are a number of ways rum can enhance your table.

Default Caribbean BBQ Sauce for ribs

I make a really yummy BBQ glaze for ribs using rum.

I take:
2 oz Coruba, or other Dark flavorful rum
2-3 oz Fresh Orange juice
1 oz Fresh Lime juice
1 TBS honey
2 oz water
1.5 TBS BBQ rub (you can google for good recipes, I like one with a bit of cayenne pepper)
2 TBS Demerara sugar

Mix all ingredients except the sugar up in a bowl or large glass. Add the sugar but do not mix it into the sauce.
You can allow this to sit while you cook the ribs. When the ribs are about 15 minutes from being ready brush the sauce on the ribs and turn frequently. Save the sugar at the bottom of the glass. When the ribs are just about done scoop the sugar and spread it on the top of the rib meat. Close the grill and let the sugar melt and form a glaze over the top of the ribs for a few minutes. Remove from heat and allow to rest.

Wonderful recipe! i will definetily try this one.. maybe you should add it to the recipe section on the left side so it doesn`t get "lost" when the threads moves on..just a thought..

here's a sure-fire variation for super-tender ribs:

Thoroughly coat the ribs in a spicy home-made dry rub. Wrap up each rack of ribs with aluminum foil, adding 4 ice cubes (apple juice is better than water) under the rack and cook on indirect heat for 3 hours. Uncover the ribs and finish them over direct heat for 10 to 12 minutes. We like to slow cook the sauce for hours in a large pot, then add rum to finish it off in the end. Cut the ribs into sections of 4 or 5 ribs, dip them in the sauce and serve.
