Default Belize Trip

I am in the initial stages of organizing my first visit to Belize. I have been able to contact the makers of One Barrel (Travellers) and Old Master rums for visits to their distilleries/facilities.
I was originally thinking of Grenada but received an e-mail from someone asking about rums in Belize and that gave me an idea to make my first visit to this former British colony.
If anybody has any information or recommendations about anything to do with Belize please feel free to post it here. I love the photos Ed has here on the MoR site, I think from Danimal. Hopefully I will be able to add to these, aswell as add a page to my site when I get back.
Off to crack my bottle of One Barrel I recently received from my best ever rum lord Rumdog007 and revisit the two bottles of Old Master Rum I have.
On a side note, the wife did not get to go to Dominica due to the length of the trip, but has two potential mules going. Does anybody have any recommendations from here??

Bear in mind that there is malaria in parts of Belize, although not in Belize City.

I seem to remember that the best Dominican rum is called "Macoucherie", which is Dominican Creole for "Come to bed with me darling".

The missus and I are planning a trip to Belize......other than 1 Barrel rum....could you let me know about good rum stores/bars etc?

Also....how is the climate in Belize for opening your own rum bar???
