Default Agricole Distillation

Over the past few months I've been exploring agricoles and have really enjoyed some of the unaged varieties. I've really been enjoying my Clement Canne Bleue recently and think it's a great value....but what do I know....only have tried about 6 earnestly so far.

I've recently also been learning more about distillation because, hell, why not and it seems odd to me that agricoles are typically distilled in columns. Now I know columns are more efficient and in the hands of an expert you can really control the product but it seems like pot stills could really highlight some of the flavors that makes agricoles great. So why aren't pot stills used for agricole? Just tradition? Or am I completely wrong about how a pot still would play with the terroir?
