Default My banana rum experiment

I recently tried adding a banana flavour to some cheap dark rum I've got. I read a recipe which is on the net using fresh banana slices and vanilla syrup. I didn't fancy having slices of banana in the bottle so I tried something else.

I got a handful of those dried banana chips and stuck them in a glass and covered them with rum, leaving them to soak for 3 days. In the meantime I made up a little brown sugar syrup by dissolving brown sugar in half as much boiled water. I then poured the rum from the banana glass through a coffee filter back into the bottle and added a couple of tablespoons of the syrup and a drop or two of real vanilla essence (the expensive stuff that is just macerated vanilla in alcohol).

The result is surprisingly good and subtle. You can both smell and taste the banana even when mixed in Coke. It's not remotely overpowering but just adds an interesting and recognisable flavour. This is in contrast to the massive over-flavoured commercial banana rums and liquors.

The addition of that small amount of sugar and vanilla also smooths out the cheap rum noticeably, which just goes to show how easy it must be for the distillers to doctor rums.

Anyway, it's so easy you might as well try it!

Thanks for the recipe. Banana chips are something I wouldn't have thought to use. I would imagine there are some preservatives added to the banana chips but it is certainly easier than using ripe bananas.

On a related note, Edward has a nice chocolate rum ball recipe on youtube. I believe he finishes them with crushed nuts (pecans?) but I've been meaning to try them finished with crushed banana chips.

I've also thought of adding rum to banana breads and cakes... Banana and rum just seem they might be very good friends.

I've done banana rum with fresh bananas. Tasted good, one of my better infusions, but the bananas seem to give a slimy texture to the rum - not bad, but maybe odd.

You have to get it filtered with a coffee filter.

You can also try dry bananas, the result is excellent.

In both case IMHO it needs vanilla and other spices (cinnamon leaves -not cinnamon stick!-, a bit of coco nut, lemon grass, clove leaves, maybe a few cloves for a very short while some clove) to give its best. And at least one month to wait!
