Default Elderflower syrup

I want to make Elderflower syrup, has anyone done that?

We mostly use the Bottlegreen Cordials if we want an Elderflower syrup http://www.bottle-green.co.uk/cordials.asp. It's a fantastically expensive essence - we've been trying to source commercial quantities for our Elderflower Collins.......

Bottlegreen Cordials looks very nice.

Maybe i should go out and pick the elderflowers when they bloom, which i think should be sometimes in may or june. And from there make my syrup..

The usual thing must be to use white sugar which makes me wonder how it would be with some dark yummy sugar on the other hand maybe that would destroy the fresh delicate taste of the elderflowers?.

It's such a subtle delicate flavour, it would be lost in heavy dark sugars

Not sure this is related to what you have in mind, Tiare, but I've used elder 'berries' before.

Its the flowers that i want to use. But the berries can also be made to syrup i think..this gets interesting, maybe i can make a syrup with the flowers and another with the berries? they should then taste differently...i got to study this..

This will give me something to do over the easter when i`m snowed in.

Another way to make a quick syrup in wait for the flower season could maybe be to buy elderberry juice which is readily available here and reduce it and then mix with a simple surup?

I'd try and get your hands on the cordials if I was you. They are basically in a form exactly as you just described....

Hm..yes maybe that would be a good idea now, but i don`t want to miss the fun in making a syrup from the flowers in the summer..and somewhere i believe that home made is best.
