Non back sweetened silver/white rum
I'm going to do an aging project where I fill a 5 gallon used bourbon barrel with silver/white rum. The idea is to let it sit and see how it changes and then re-bottle it when I like the transformed product. Then I'm going to brew a big imperial stout to fill the barrel. This might take a few years, who knows, but I'll have a lot of fun drinking rum!
But, the catch... I know that some rums are back sweetened. and I want to avoid adding sugars to the barrel.
Do you all know of silver rum brands that are not back sweetened that won't break the bank?
