Smile Fried Plantains

A long time ago I visited Margarita Island in Venezuela. I didn't know anything about fine rums, but there were lots of really cheap bottles of rum on the shelves and I bought one to make fried plantains with.

Fried the plantains in butter till almost soft then added some honey and stirred till the honey had almost caramelized and the plantains were cooked. Splashed in a goodly dollop of rum, a few more stirs and onto the plate.

I tried to flambe it as well which required more rum

I own a timeshare at the Marriott St. Kitts. At one of the restaurants they make fried plantains with Brinley's Mango Rum. Amazing!!

Fried plantains are one of my favorite appetizers for the first drink of the day. The best plantains are the ones that are completely black and starting to get some white mold on the outside. At that point they are sweet and juicy inside.

The above dishes sound great, but you should also try a plaintain, sliced diagonally, fried only in a drop of olive oil. You'll swear someone added a bit of cinnamon and sugar after it caramelizes.

sweet plantains are great, but green ones fried to make tostones are also awesome in my book

yeah Ron, love em as tostones too... with that garlic sauce, OMG!.. what's in that anyway?? some kind of lime or lemon juice, a bunch of garlic, salt, a bit of oil i guess.. do you know?

But rum with fried plantains could get my attention too, as in, bananas foster, cuban style, kill the ice cream. Now that we know what Ed H eats in the morning, everything else on this site makes sense!
