Default Cockspur Rums

Cockspur 12

Cockspur Rum, was founded over one hundred years ago in 1884. The rum company has a rich history and their rum is widely regarded as amongst the very best in the world. A friend of mine found and purchased a bottle of the Cockspur 12 about six months ago. He offered to give me a large enough portion so that I could review the rum for my blog, and I gladly accepted his kindness. I am truly blessed to have such friends as I do. This is a fine rum and it is very similar to MGXO (it actually might be a little better - I'll need to do some "research").

Default Cockspur Fine Rum

Cockspur Fine Rum is the flagship brand for the company. It is distilled from Island cane molasses, aged in American Oak, and brought to bottling strength with Barbados’ own coral filtered water. Both column still and pot still rums are used to in the distillation of the rum which bottled at 40 % alcohol by volume.

The Cockspur 12 Rum sold in Canada, (and I believe most of the US) is now bottled with 100 % Bajan coral filtered water. Previously it was brought to 40 % bottling strength with water from the Hood River Distillery after being shipped in bulk at cask strength to their facility.

I revisited the Cockspur 12 and found a significant difference in my appreciation of the rum.

Are you 100% convinced that the water made the taste difference?

Could it have been a different "batch?"

We are never 100 % sure of anything.

Two years ago I reviewed a bottle I purchased, and a few months later a friend of mine brought over another bottle and his bottle tasted like mine did. In Miami last May I sampled some new Cockspur (at the luncheon I mentioned in the review) and noticed the difference immediately. I was given a sample bottle at that luncheon to take home, and I was sent another bottle about two months later to review. Each of those bottles tasted the same and much better than I remembered from my earlier experience.

Now two years is a while, and it could be that the blend has slowly gotten better over time, after all we would expect that they are trying to improve at all times. (In fact that switch to 100 % Coral filtered water was mentioned by the Cockspur representative to me as just that type of improvement over time that they are trying to achieve)

It could also be that my palate has changed slightly over two years with myself gaining a larger appreciation for Pot Still Rum. All I can say definitively is that the new Cockspur blended rum with the coral filtered water tastes better to me today than the old blended rum with the Hood River Water did two years ago.
