Default Candied Pecans

I made these for a salad a while ago and they came out fantastic.

Started with some Pyrat XO (any aged rum will do well), sugar (I know, sugar with your sugar), one whole clove, one half of a cinnamon stick, one half of a vanilla bean, split lengthwise and seeds scraped into the mix. Put all ingredients (except nuts) into a heavy saucepan and bring to a boil to reduce to a syrupy consistency.

Remove the spices with a fork and add pecans. Allow the syrup to coat the pecans for a few minutes.

Transfer the coated pecans to an aluminum foil lined baking sheet and bake at 350F for about 5-7 minutes to crisp the candy coating. Place on wax sheets immediately and allow to cool.
