Default Brazillian Chicken

Made this for dinner tonight with some Mojitos and Rum Cake for dessert.

3 lbs Boneless Chicken Thighs
2 cans light coconut milk
1 mango
1 pineapple
1 cup pineapple juice
1 cup Pussers Rum
1 cup chicken broth
1 onion
2 cloves of garlic
1 Tbs Tumeric
1 Tbs cumin
1 tsp cayenne pepper
1 tsp white pepper
1 tsp garlic powder
1 tsp ginger
1 tbs crushed red pepper
8 oz crab meat
Salt to taste

Mix tumeric, cumin, cayenne, garlic powder, white pepper ginger and salt. Rub into the chicken.

Heat 1/4 cup olive oil in cask iron skillet. Fry the chicken about 2 minutes on each side and set aside. Add chopped onion and cook down. Then add the chicken stock, diced mango, diced pineapple, crushed red pepper, pineapple juice and coconut milk and simmer for about 1 hour to reduce. While sauce is simmering heat up a charcoal grill and add a few chunks of mesquite wood and apple-wood and smoke the chicken while the sauce is reducing.

After about an hour add the Pusser's rum and crab meat and simmer about another 1 hour.

Serve over rice and spoon the sauce over the chicken and rice.

Mmm! Yes, it is a divine dish indeed. You should also try the Argentine Outdoor Beef barbecue.
