Depaz cane syrup? He might've well used Steen's or molasses.
If I can't get Petite Canne, I just use simple syrup with a dash of honey.

I like a little honey if I don't have any sugar cane syrup, but it just doesn't have the cane flavor of sugar cane syrup, and it doesn't dissolve as quickly.

I agree that honey can be a good substitute. It is a real flavor down here depending on the time of year, and it cannot be compared to cane sugar in my opinion. Honey coming from a hive near mango or quenepa or aprina trees is very distinct...and wonderful.

Now you're talking real honey, not like the processed stuff you buy in the US. I used to take honey from Nevis to St Barths and it was more profitable than carrying rum, though there was always a demand for CSR and sometimes the honey market was a little soft.

Depaz cane syrup is available here, but I don't use it, as it is too heavy and molasses flavors are strong. I order my Petite Canne online, and keep it in supply. I have not ordered in awhile, and would have to find which site I ordered from! Maybe Ed can list where it is available. If you like the Ti Punch, having Petite Canne is a must, and worth the shipping costs.

Around CA, the Petite Cane Syrup is +$10.00 a bottle and around Colorado it ranges from $5.99 to $6.99. ??????
