Good points Ed. I think in order to manage the oak influence, I will draw off two or three litres into clean bottles when I determine enough flavour imparted. Then top off the barrel with fresh rum. Having a stock of "bottled" home aged rum for give aways, or to bring to a gathering would be a fun thing I think.
