I thought I had replied back to this yesterday but maybe I forgot to send.

So essentially column still use for agricole is more about tradition (regulation in Martinique's case) and timing than anything. I'm assuming, due to the speed in which fermentation needs to begin after harvesting, that the continuous nature of column distilling work better on a large scale.

Am I wrong in thinking that a pot still could also produce a quality agricole, considering the opportunities for additional congeners, if timing and regulation weren't factors that needed to be considered?
