I'll try to keep this updated with any recipes that I come up with. I can post those that don't include rum if there's any interest.
First up:
In the Orchard
1oz Cinnamon Apple Cider (or plain apple cider)
1.5oz Cruzan Black Strap Rum
1oz Amaretto
0.5oz Scotch (go for a highland 12 year - Glenlivet or Glenfiddich are both good)
2-3 dashes Angostura Bitters
Orange Peel

Bitter Saint
1/4oz Angostura Bitters (yes, an entire 1/4oz, don't worry, we'll balance it out)
1.5oz Dark Rum (Appleton 12 year works well, as does Flor 18 year)
1oz Benedictine
1/2oz Simple Syrup
1/4oz Lemon Juice (fresh squeezed)
Lemon Peel

A quick note being the OCDer that I am, Glenfiddich and Glenlivet are Speysiders, not Highlanders.
Nice recipes though.

This is true, however, I've heard quite a few people and read some arguments that the Speyside region is technically considered part of the Northern Highlands. Either way, a Speyside or Highland will work. Lowland scotches are too soft and give almost no smoke, where Island (again, part of Highland) and Islay are too smokey for this application.

OK, since I haven't made any new rum drinks lately, I thought I'd go with some new non-rum based cocktails I've made recently.
Miles to Go
1oz Honey Syrup (2:1 honey:water)
1.5oz VSOP Cognac
1oz full bodied red wine (Merlot and Cabernet have worked well)
3-4 dashes whiskey barrel aged bitters
Rinse with Islay scotch
Pink Silk
1 egg white
1oz Gin
0.5oz Pastis
0.5oz Peychaud's Bitters
0.5oz Lemon Juice
0.5oz Simple Syrup
