Green Rim

I'm seeing a fair bit of green rim in one of my rums. In the whole bottle it looks almost black. Looking thru the bottle towards the light the color is dark burgundy. In a glass it is distinctly GREEN.

Aged in wood, from what I've always heard - and noticed when I knew to look for it.

After multiple filtering sequences, we got it back to a respectable color. Unfortunately this also removed more of the flavor than I wanted. But there is no way to un-filter this batch. :rolleyes:
I'm planning to enter this in the rum competition as Temptryst Cherrywood XO Rum. We'll see how the judges like it.

Yep. Filtered it back a bit too far. Got a silver medal in the premium category.

According to David Morrison, senior blender at Appleton Estate Jamaica Rum, the green tint in the meniscus of an aged comes from the wood used in the barrel. Certainly various woods will display different variations of this green tint. I find it most pronounced in rums aged a long time or aged in newer wood which give up more flavor to the rum than an old neutral barrel.

I'm going to start a new batch of cherrywood rum using the same process as the previous batch that had the heavy green rim. I will post the green rim results here. But this time I won't filter it back as far!

Ive seen the green rim in a variety of old rums, especially the Appleton 21 and their Master Blend. I've also seen it hanging out in the Pyrat Cask, Flor 18, and Barbancourt 15. It's my understanding that the green rim is very good!
